After being highly inspired by the lovely ladies and amazed at the easy way in which khandavi could be prepared in the pressure cooker I tried my hands at my all time most favourite dish - Khandvi. Posting some pictures of my home made khandvi.
Thanks to all the ladies who taught me how to make this wonderful dish in 3 whistles of the pressure cooker.

Recipe is mandatory so here goes :
Ingredients
1 cup besan
1 cup laban ( thick buttermilk)
2 cups water
Little haldi
Some hing
Salt to taste
pinch of sugar(optional)
Little red chilly powder

For garnishing: grated coconut and coriander.
Tadka: Rai and hing

Mix all the ingredients together and take care that there are no lumps formed. Can also use a hand mixer for smooth consistency. Put this mixture in a wide open vessel and put it in the cooker. Let it whistle 3 times. Let it cool and wait till the cooker easily opens. While waiting grease the steel plates with oil. I greased 4 big plates and 4 small plates.
Once the cooker opens, take out the vessel and mix the mixture very well and put a spoonful on each plate and spread it evenly on the plate. Then garnish with grated coconut and coriander. Once it cools well. Cut into strips and roll. Place them all in a plate and give the tadka. Too yummy and easy to make. Do try it girls esp the once who keep thinking its tedious.
