Milk powder gulab jamun
ingrediants
100 gms milk powder
50 gms maida/all purpose flour
50 gms ghee
1/4 tsp baking soda
1/4 tsp cardamom powder
water as required to make the dough(approx 1/2 cup)
oil to deep fry
for sugar syrup:
1.5 cup sugar
1.5 cup water
2 tbsp milk
1/4 tsp cardamom powder
method
take milk powder, maida and soda in a wide bowl. mix well then add ghee. mix it well so that ghee mixes evenly with milk powder. sprinkle water evenly over the mixture and gently mix it. mixture should be soft. cover with a wet cloth and keep aside for 25-30 minutes. meanwhile make sugar syrup. take water and sugar in a kadai and boil for 5-7 minutes. if the sugar syrup has impurities, then add milk and simmer. a layer of scum will be formed. remove this layer with a spoon. add cardamom powder. when the sugar syrup starts turning sticky switch off the flame and keep aside. now pinch 15 equal sized balls from the dough and roll smoothly. heat oil in a kadai. when oil is medium hot reduce the flame to low and drop few jamuns. roll them with a ladle and fry in low flame until brown in colour. drain and immediately add it to warm sugar syrup. cover and let it rest for 1-2 hours. serve.
