Aloo kofta curry with wheat kulcha

For kulcha:-
Wheat flour 3 cups
Salt 1/2 teaspoon
Oil 3-4 teaspoon
Curd 3 tablespoon
Sugar 1/2 teaspoon
Baking soda 1 pinch
Baking powder 1 teaspoon

Mix all ingredients and knead soft dough with enough water. Cover with lid and rest for 2-3 hrs.

For aloo kofta curry:-
For kofta:-
Boiled potatoes 5
Salt to taste
Red chili powder 1 teaspoon
Lemon juice 1 teaspoon
Chopped coriander leaves 2 tablespoon
Breadcrumbs 2 tablespoon or as required
Mix all ingredients well and make ***** from it. Flatten slightly. Shallow fry with oil on both sides till golden brown. (U can deep fry also. Add little water if mixture becomes dry.)

For curry:-
Oil + ghee 5-6 teaspoon
Bay leaf 1
Cloves 2
Small cinnamon piece 1
Green cardamom 1
Big cardamom 1
Chopped onion 2
Garlic pods 6-7
Tomatoes 2
Cashew nuts 6-7
Salt to taste
Turmeric powder 1/2 teaspoon
Red chili powder 2 teaspoon
Kitchen king masala 2 teaspoon
Sugar 1 teaspoon
Malai or cream 2 teaspoon
Kasoori methi 1 teaspoon

Grind onion and garlic with little water and make paste.
Grind tomatoes and make puree.
Soak cashew nuts in warm water for 1/0-15 minutes. Grind with water and make paste.
In a pan heat oil and ghee. Add bay leaf, cloves, cinnamon piece, green cardamom and big cardamom. Roast for a while.
Add onion garlic paste and saute till oil seperates. Add cashew nuts paste and saute it. Add tomato puree and saute till oil seperates.
Add turmeric powder, red chili powder and kitchen king masala powder. Mix well. Add enough water to get desired consistency. Add salt, sugar and malai.
Simmer for sometimes.
Add kasoori methi and off the flame.
Add koftas at the time of serving.

Now knead dough again.
Make ***** from it.
Take one ball, coat with flour and roll out slightly. Apply water over it. Put chopped coriander leaves and black sesame seeds or kallnji. Roll out to thick roti. Apply water on the back side of roti and put on hot tawa. Cover with lid and let it cook.(roti will stick on tawa). Then remove the lid, cook upper sideof roti directly on flame by converting the tawa. Cook till some black spots appears. Remove from tawa
Apply butter or ghee and enjoy.
