Now that we’ve got that out of the way, let’s talk about when you should clean your machine. If you have multiple products running on the same machine, but not at the same time, it’s only logical to clean out the one product before you throw in the other. Don’t want to cross contaminate it, right? Aside from that, we recommend you clean out your machine by the end of the production day. The reason being: not everyone has the luxury of having a controlled environment, and depending on your product it could get caked on, harden, and make harder to fill if it gets too humid, or too cold. It would be easier to clean out your machine the day before, than coming in and holding up production because you now have to scrape off caked on cake mix.
You probably have your favorite cleaning solution already sitting on your desk ready to go, right? Well put it away, because all you really need is soap and water. Really, that’s it! You can also use stainless cleaner for the outside metal and conveyors. However, do NOT use bleach. We only recommend using bleach if you want your machine to rust really quickly and fall apart, and it is our understanding that those things are bad. Using standard dish soap is what we recommend, as it is gentle on the machine while removing food, dust and grease. Simply break down and clean the contact parts, which is anything that comes in contact with your product such as the hopper, tooling, pans, belts, and any other parts.
